Creamy Cauliflower, Broccoli and Spring Onion Soup!

I know its still August but with the weather not being so fantastic, I just fancied a hearthy warm bowl of soup, So for lunch last week I was inspired to make some after I had a mug of my sister Jennifer’s beautiful vegetable soup the evening evening. This is my Creamy superfree Cauliflower, Broccoli and spring onion soup! Served with a freshly baked crusty weightwatchers petit pan roll (healthy extra b or 5 syns)! If you follow the Slimming World plan this is syn free and suitable on all plans! a fantastic way to get your superfree veg in and a one pot dish!

To make it you will need:

1/2 head of cauliflower.
1/2 head of broccoli.
4 carrots.
2 cloves of garlic
1 bunch of spring onions/Scalions.
2 chicken stock cubes or home made stock.
1/4 teaspoon of sweet paprika.
Freshly cracked black pepper to taste.
800ml of just boiled water.
100ml of milk. (Hexa)

There is no real method to this I just put everything into a saucepan add the stock cubes and pour the water over the veg. If you feel you need more add more. I wait and add the 100ml of milk at the end after I blend it to a smooth consistency with a hand blender. Soup should be on a slow simmer for approx 35 minutes.
