Dense Fudgy Chocolate Brownies

I just cant get over how amazing these bad boys are! I have been trying to perfect my brownie recipe for quiet a while now and I think I done just that! They are dence, fudgy and gooey just like a proper brownie should be, but sugar and flour free of course. I flavoured these with orange zest and extract, they are like taking a bite of Terrys Chocolate orange. They can be flavoured with anything you like my next batch I am going to try Mint extract!

Makes 12 large brownies

6 medium eggs.
4 tbsp of Cocoa Powder.
35g of sweetener.
1 wheat biscuitย  (weetabix)
1 tsp of baking powder.
240g greek style yogurt or natural yogurt (any flavour).
1 level tbsp of smooth peanut butter.
1 level tbsp of Chocolate Hazelnut spread.

Line and grease with low cal cooking spray, a swiss roll tin or lasagne dish and preheat your oven to 195c for a fan oven and 200c

Finely crumble in the wheat biscuit and add 5 whole eggs and 1 egg yoke seperating the last egg. To the bowl and add all of the other ingredients to the whole eggs and yolk and mix well with a hand mixer. This is when I would add my flavouring like orange zest etc.

In a seperate bowl whisk the last egg white to form stiff peaks and fold gently into the chocolate batter.

Place the mix into the lined tray and bake at 195c for 30/40 minutes until a skewer comes out clean.

When cooled place in the an airtight container and leave in the fridge for a couple of hours to set up.

Happy Baking!
