For the season that is upon us, Halloween or all hallows eve and of course all of the temptations are in the shops right now! I myself love a brack especially the ones that you get the Gold Ring in! I think it takes me back to my childhood when you would be sticking your little finger into the brack to feel for the parchment wrapped ring. Of course there was always a clip around the ear to follow! But if you are like me it wasnt just a sliver, it was thick crusty slice of Barm Brack smothered in Kerrygold Creamery Butter (drools). I apologise but bread and butter maybe be only staple foods to some people but I would do time for it!! So I have come up with a quick and simple healthy version for you, which I promise tastes like the real thing and of course its on you if you buy the butter to go with it!!
4 wheat biscuits. (Weetabix)
5 medium eggs.
Grated zest of 1 lemon and 1 orange.
2 tbsp of mixed spice.
1.5 tsp of baking powder.
50g of sultanas
220g tub of Quark, fromage frais or Plain greek sytle yogurt can also be used.
35g of granualated sweetener.
100mls of cold strong tea.
2 tbsp of mincemeat optional! (as used in mince pies)
Preheat your oven to 200c and line a 9 inch loaf tin and spray with frylight.
Place the measured sultanas in a bowl and soak overnight in the cold tea. If you dont have the time make 100ml of strong tea pour over the fruit and leave to soak until cool.
In a large bowl crumble up the the wheat biscuits and add the yogurt, leaving out the sultanas and baking powder, add the , whole egg, mixed spice, lemon and orange zest, mincemeat,sweetener and mixed well.
I then fold the sieved baking power into the mix and add the sultanas. (I add the tea aswell)
Add the mixture to the lined loaf tin and baked for 4o/50 minutes at 180c until golden brown.
