So I know you have all been waiting patiently for this one. I have finally found an option for a low calorie Cheesecake. This is just so decadant and light but has amazing filling power. You can of course experiment with the topping flavours, vanilla, orange, strawberry, I will trying this with Irish Cream next but the list is really endless. The base of course is using my new brownie recipe it makes it so dence and luxurious.
3 medium eggs.
1.5 tbsp of Cocoa Powder.
15/20g of sweetener. (Depending on how sweet your tooth is)
1/2 a wheat biscuit (weetabix)
1/2 tsp of baking powder.
100g greek style yogurt or Quark (any flavour).
1 level tbsp of smooth peanut butter.
1 level tbsp of Chocolate Hazelnut spread.
1 full tub of low fat cream cheese.
1 full tub of fat free quark cheese.
1 sachet of Geletine.
1 sachet of sugerfree lime jelly. (If you cannot find this use the juice and zest of two limes and use 1.5 sachets of Geletine)
2 egg whites.
20g of sweetener.
2 squares of white chocolate.
Grease a 6 inch springform tin with low cal cooking spray and preheat your oven to 195c.
Add all of the brownie ingredients to a bowl and mix well. Plave in the spring form tin and place in the oven for 20/25 minutes or until a skewer comea out clean. Remove and leave to cool. I made mine the day before and left in the fridge.
To make the topping the I make up the jelly and geletine with 150ml of water and leave to cool but not set.
Whisk the egg white until it forms stiff peaks.
Mix the cream cheese, quark, sweetener, zest and juices of the limes, add the geletine gradually and then fold in the egg white.
Place the mix on top of the brownie base (it may have shrunk away from the sides but dont worry this is normal) place in the fridge over overnight. When set grate over some white chocolate.
N.B. Raw egg white should never be given to babies or elderly people.
