TheNakedBlondie Breakfast Muffins


These little saviours are my absolute go to if I am rushing in the morning. Perfect to make the night before and grab in the morning on your way out the door. So to make these little beauty’s you will need……

Makes 20 Breakfast Muffins


6 medium eggs.
2 tbsp of natural yogurt.
1/2 a chicken stock cube crumbled.
1/4 tsp of garlic granules.
10 pieces of extra lean smoked bacon.
1 can of baked beans strained of their juice.
1 pack of button mushrooms.
Salt and pepper to taste.


Cut the extra lean smoked bacon into small lardon pieces and fry in low calorie spray until cooked through.

Cut the mushrooms very small into the same size as the bacon and fry in low calorie spray until they are to your preference.

Strain the can of baked beans in a coulander or sieve and leave to drain while you make your egg mix.

To make the egg mix crack six medium eggs into a bowl with the natural yogurt, stock cube, salt, pepper and garlic granules (garlic granules can be left out if so desired). Mix well with a hand whisk.

Add the cooled fried mushrooms, bacon and beans to the egg mix and spoon into cupcake trays sprayed with low calorie spray.

Place in a preheated oven at 200c for 25 minutes.

You can also top with some grated cheese and are lovely placed under the grill the next day topped with some sharp cheddar and served with a lovely salad. Or do like I do and grab and go with a banana 😉

When cooled always store them in an airtight container in the fridge.
