TheNakedBlondie Christmas MincePies ❄

This year is my 1st Christmas where I won’t be gorging on beautiful Mincepies from the end of November until January, so I needed a recipe that is designed to help you and myself keep on track without missing out on those sweet treats that are always associated with this time of year.

Makes 12 Mince pies.

4 wheat biscuits.
1 tbsp of Mixed Spice.
1/4 tsp of ground ginger.
1/4 tsp of cinnamon.
4 medium eggs.
150g of fat free natural or vanilla yogurt.
25g of granualated sweetener.
50g of Mincemeat.
12 foil mincepie cases.
Low calorie cooking spray.
1 tbsp of Iceing sugar.

Preheat your oven to 200c. In a bowl crumble the wheat biscuits to a fine crumb.

Add the sweetener, spices, fat free yogurt and eggs to the mix and beat with a hand mixer or whisk.

Add the foil cases to a bun tray (if you cant get the foil cases spray the bun tray with low calorie spray it will work perfecr without) and place 1 tsp of the spiced batter mix to each case.

I then place 1/2 a tsp of the mincemeat on top and another tsp of the spiced batter on top of that and spread to cover the mincemeat.

Place in the preheated oven at 200c for 30/35 minutes. The mincepies should be firm to touch before you remove from the oven.

Remove from the oven and leave to cool and dust with 1 tbsp of iceing sugar or sweetener.

It would also be a lovely idea to give these as a present to a loved one who is trying to stay on plan this Christmas. Here I just bought some presentation boxes and add the mince pies to it. I love homemade gifts and would love if somemade made these for me, wouldn’t you?

My Christmas Cake and pudding recipe will be live tomorrow 😉

Just wanted to say Thanks a million for posting these. My huge downfall is mince pies and I was wondering how to get through Christmas and still stay on plan with all the treats going around. Now I can and enjoy them!
