Hearthy Pearl Barley Beef Stew

“The stew” everyone has there own version and most likely they have been passed down for generations! Now I would never have put Pearl Barley in a stew until I met Mr. Nakedblondie and this was the way his Mammy always made it so I gave in and well low and behold its a wonder ingredient! And of course mine is nicer!! This is also perfect for throwing in the slow cooker to be ready and waiting for you when your arrive home in the evening.

Ingredients

500g of Extra Lean Stewing Beef all fat removed.
4 Large Carrots.
1/2 a small Turnip/Swede.
3 sticks of Celery.
1/2 a large white onion finely chopped.
1 clove of garlic.
1 and half handfuls of Pearl Barley or soup mix.
2 Beef Stock cubes.
1 Chicken Stock pot.
Par boiled water, enough to cover.
Freshly ground pepper.
Low calorie cooking spray.

Method.

In a large Casserole pot or frying pan brown off your stewing beef in the low calorie cooking spray. You will not need to cook through but just to seal the meet and create flavour.

Add the celery, onion and garlic and fry for a further 2 minutes.

I then add the stock cubes to the pot and  if using a slow cooker I would transfer the meat and veggies now.

Add in the prepared veg, this is just what I like in it please feel free to add whatever veg takes your fancy!

Then add the pearl barley and enough par boiled water to just cover. It will reduce as the pearl barly will soaked up the liquid.

Leave to simmer (you dont want a rapid boil) on a low heat for about 3/4hours. If using a slow cooker you can leave it all day or over night!

When the stew is done the meat should be wonderfully tender and fall part. Feel free to adjust seasoning to your taste and enjoy served with boiled potatoes and seasonal fresh veg!

    hearty beef stew with pearl barley is amazing so tasty everybody clears their plate and so handy it can all be thrown in the slow cooker so less hassle for me I can have it on from the night before an give myself a break on particularly busy days with schools choirs music lessons homework house cleaning working etc etc its one less stress and I know we are getting healthy wholesome food
