Oaty Flourless American Style Pancakes

This little recipe is perfect to be enjoyed by all the family! It is a perfect Valentines breakfast for your beloved, after school snack for the kids or to be enjoyed as a treat on Shrove/Pancake Tuesday!


Makes 24 Small American Style Pancakes


35g of Porridge Oats
1 tbsp of plain flour (Optional I leave it out)
125g of Quark
125g of 0% fat free greek yogurt or fat free Vanilla yogurt.
1 tbsp of Vanilla extract/1 Vanilla bean
3 large eggs or 4 medium eggs
4 tbsp of sweetener/stevia/natural plant sweetener.
Low calorie cooking spray/coconut oil


Weigh the oats, add to a bowl with the eggs, sweetener, quark, yogurt and vanilla extract, cover and place in the fridge overnight or for at least 2 hours. This will ensure the oats swell and will give you a thicker batter to work with.

When you remove the mix from the fridge you will need to to mix it well as the egg will seperate and rise to the top.

Grease the pan with low calorie cooking spray or coconut oil and place 1 dessert spoon of the mix onto the pan. I get four pancakes in each batch. Repeat the process until all the mix has been used.


Enjoy served with extra lean bacon or sausages and a drizzle of maple syrup or homemade tomato Ketchup. And for a sweet treat dust with iceing sugar, drizzle fresh lemon juice on top or served with a dollop of creamy chocolatey Nutella!




Homemade Tomato Ketchup


500g of Passata
2 tbsps of Tomato puree
1 stick of celery/celery salt
2 tbsp of white wine or cider vinegar
4 tbsp of sweetener/stevia
1 tbsp of garlic granules
1 tbsp of Worcestershire sauce
1 tsp of salt
1 tsp of powder Geletine/1 sheet/ 1 tsp of agar agar
100mls of water


Add the passata, and all of the other ingredients to a pan, chop the Celery Stick in half if using and add to the sauce.

Leave to simmer on a low heat for 20/25 minutes until the sauce reduces and place in a steralised airtight jar (I pop mine in the dishwasher). When cooled place in the fridge where it will keep for up to 2 weeks.

    Hi the quark in the ingredients isn’t mentioned in the method. Do u add this at the start with the oats for over night soaking too? Or later before cooking? Thanks F

    Was wondering if you can do this without the quark?? And when you are using it when do you add it to the mixture?? I’m guessing with all the other ingredients and left overnight in the fridge? Love all yor recipes.
