Bombay Potatoes

This beautiful dish is inspired by one of my ultimate heros Mr.Jamie Oliver! This recipe for bombay Potatoes is just the ultimate comfort food and couldn’t but not share with you! I have tweaked the recipe slightly to suit my diet omitting butter oil etc. This is a dish you will want to make over and over again!

Ingredients

6 potatoes, peeled, parboiled and cut into cubes
1 teaspoon mustard seeds
1/4 tsp of ground cumin
1 teaspoon turmeric
1 teaspoon ground coriander
1 teaspoon garam masala/tikka curry powder
1 teaspoon chilli powder
1 tsp of fresh or dried ginger
4 tomatoes finely chopped with inside removed
Handful fresh Parsley or coriander roughly chopped.
Low calorie cooking spray or Coconut oil

Directions

Heat the frying pan and fry the spices in low calorie cooking spray or coconut oil  for a few minutes. Then add the potatoes making sure they are completely coated in the spicy mixture. Cook for about 10 to 15 minutes, then stir in the tomatoes and the coriander.

I have also tryed this in my Tefal Actifry and it works just perfect!

To serve, top with a fried egg and some seasonal stir fried veg! Or have with your favourite Indian Curry as a side dish.

    Thanks for the fab recipes. Do you count coconut oil as Syns when you’re using it instead of low fat spray?
