Serves 4 people
4/5 Chicken fillets.
1/2 a large spanish onion.
1 Carrot Finely julienned (like Matchsticks)
1 red and 1 green bell pepper.
1 bag of beansprouts.
1.5 tsp of fresh or ground ginger.
4 tbsp of Oyster sauce
50mls of water.
1 red Chili or Chili powder add as little or as much as you like.
4 cloves of crushed Garlic.
2 tbsp of Dark Soy sauce.
1 tbsp of light soy sauce.
Low cal cooking spray/Coconut spray oil/coconut oil.
2 nests of thick egg noodles.
Prepare the chicken breasts, I like to slice across the breast and finely slice. Add to a bowl with 1 clove of finely crushed garlic, the light soy sauce and ginger to the chicken and leave to marinade for at least 1 hour.
In a Wok brown off the chicken, add the carrots, onions and stir fry for 1 minute.
Add the water, leave to simmer for a further minute.
Add the dry or fresh spices, garlic, ginger, oyster sauce, dark soy sauce and chili and leave to reduce for 3 minutes.
This is when you need to put the noodles on to cook! Just before they are done I add the peppers and beansprouts, add the noodles and toss well. Serve with some steamed seasonal veg.
