Super Nutty Granola

What you need:

2 tbsp of Olive oil/Coconut oil
1 tbsp of maple syrup
1 tbsp of honey
4 tbsp of coconut sugar

2 tbsp of water
1 tsp vanilla extract
300g jumbo oats
1 tbsp of flaxseed
1 tbsp sesame seeds
25g pumpkin seeds
25g of chopped whole almonds
25g of chopped Brazil nuts
25g of chopped walnuts
25g sultanas
25g of chopped dates
25g of chopped figs
1 tsp of cinnamon

How to:

Preheat your oven to 150c/130c fan oven or gas mark 2. Mix the olive oil, maple syrup, honey, water and vanilla extract in a large bowl.

Tip in all the remaining ingredients, except the dried fruit and mix well.

Pop the granola onto two baking trays and spread them out to create an even layer.

Place into the preheated oven and bake for 15 mimutes, remove from the oven and then mix in the dried fruit and bake for 10-15 mins more. The trick for having those lovely clusters of granola is to leave it be and not mix it too much.

Remove and scrape onto a flat tray to cool.

Serve with cold milk, yogurt, on top of a smoothie bowl or just plain old out of the jar for a quick snack. YUM!

The granola can be stored in an airtight container for up to one month.
